Protein Pancakes (Wheat-Free & Gluten-Free)

Protein Pancakes are low fat, low carb and delicious. Next time you feel like sth sweet I definitely recommend you this recipe. They are perfect for breakfast and as a dessert!

In the mix (4 pancakes):

  • 100g  almond flour/ground almonds
  • 2 eggs
  • 1/4 tsp vanilla extract
  • 1/5 cup water (for puffier pancakes, you can use sparkling water)
  • Cinnamon to taste

Preparation:

Mix ingredients together and cook as you would other pancakes.
The only difference is cooking time. It takes only 2 min for almond-based pancakes to be ready.
As they are normally drier that normal flour pancakes, I would eat them only with syrup. Personally I use Agave Nectar, but I bet Maple Syrup would be as good. You can any fruits and toppings. Get creative!
